Ask them what the pre-load is on the propshaft. If they don't know - walk away. They don't know how to do the job properly.

Get the car in the air if possible. Stop one wheel from rotating by chocking it somehow. Put it in gear with the engine off and rock the other wheel and see what moves.

It does sound like the flexible coupling, but it could be any of the joints in the transmission.
