Back on topic: The Z3 hand break is the same as the E30, it's a very reliable system and should be able to lock both rear wheels with no problems. In my experience I'd say whilst you in there change the thermostat housing (plastic on 2.8 and cracks) and thermostat.
Check viscous fan and the actual plastic fan itself. They can break with no warning as they get old and bits fly off damaging things you don't want damaged, happened on mine.

Yep 6kg is only ideal if you have smooth roads around where you are (highly unlikely in UK!). Mine does bottom out on the rough stuff around town but on the types of open roads I drive on it generally is fine but I'll be changing to 8kg soon just as it is the only negative of the whole set up for me...

The grille is M specific (different shaped holes in the bumper compared to others) but if you are on a budget I wouldn't worry about that cost given the long list of other parts you need. I think you issue is more than bushes. Based on my experience of the Powerflex Purple I removed the rattle and have a gearshift like new. After a few years in Athens I had dents on every panel, I feel your pain!
The damage to the panels looks pretty light so should be able to be repaired.
Hopefully the suspension is not too bent but that will take some checking.

Yes it does... And I found that the the entire middle section needs to come out too. I have mine is pieces now, pretty simple but I have no pics but will try and explain. Just pop the cover under the roll hoop (carefully with a thin but not too sharp tool so as not to mark it), butter knife is good)...

Check out the fuel tank straps and all the other bushes whist there. Brake lines can be checked too. You can use a Poweflex diff bush which just pushes in by hand. I admire your desire to tinker but would say you can easily buy a 2.8 with history- just look for a cheap 3/5/7 series with the engine an service history. Hi what coilovers did you fit?? Just cheap ones, they're a bit bouncy which is why I plan to upgrade to BCs at some point :-P I've just done this. Cheap coilovers are not worth it.
